Corner Bakery Cafe (UTC)
I was shopping at UTC mall when Dennis called to ask about that night's dinner plans. Since there were multiple restaurants where I was, I decided we should try out Corner Bakery Cafe. It's part of a chain with about 170 locations nationwide including at least three in the San Diego area. Besides sandwiches and salads, they also have fresh baked bread for sale that you pass on the way to the register.
I really wanted a panini that day. The Chicken Pomodori had ingredients that I love so that's what I ordered. The flavor of the chicken with the tomatoes and spinach and creamy cheese was exceptional together. The sourdough was a little bit more on the crispy side but goes perfectly with the ingredients inside. It's no surprise to me that it's a customer favorite including me now!
On the side were house-made potato chips which were a little crunchy and lightly salted. I gave Dennis the pickle.
Dennis got the Roast Beef and Goat Cheese sandwich. Sometimes goat cheese doesn't work in a sandwich but it did here, adding a nice creamy taste to the deli meat. The bread was also nicely toasted and about the right thickness for the ingredients. It was another very delicious sandwich but I preferred mine while Dennis preferred this one.
I haven't been into sandwiches lately, especially when I feel like I could make something better at home but these left me very satisfied! I'm interested in trying a few more from their menu since we only got to try two of them. Any other recommendations?

There's a 'Trio Salad' plate that can really be a meal here. I like each of the salads (tuna, chicken and egg are really nice and one of those is always chosen) and get all crazy and sometimes get two salads and a soup. We've mostly gone to CBC for breakfast though and the 'chilled oatmeal' (muesli) is something you just don't see on menus and it is filling and refreshing. It is a great place and a little different.
Ooh such yummy suggestions! Since we're on a 'diet' starting this week, salads could really work out haha! Muesli sounds interesting too! Our Vegas vacation last week was full of delish but adding that to all these 'Taste of' events in October (why'd they plan so many in a 1-2 month period), we really need some healthy eating!
I see they specialize in breakfasts and the Buttermilk Pancakes with eggs looks good. Being called a 'bakery,' I'm surprised to see that there aren't any pastries listed on the menu, like croissants (or this might be a good thing since you're on a diet, hee hee)!
I totally missed the fact that they served breakfast! I was pretty focused on sandwiches that day. I guess we'll have plenty of things to try when we revisit! Sounds like croissants will have to be gotten elsewhere!
I've tried their breakfast sandwiches before which aren't too bad and some of their cold oatmeals aren't shabby either. I keep meaning to go and try lunch sometime (the same location since this is near my work)! They used to give out a freebie for birthdays but I didn't get one this year. Or maybe they don't love me anymore.
i'm not too big of a breakfast person so it may take a while before i try anything there. too bad about the email freebie though. i'm not sure if i'm signed up yet. i can't wait to see your bday list! i have one in draft mode and i'm just gonna confirm/fill in when my birthday offers come in december. until then i'm gonna work out so it doesn't hit me so hard hehe =)
